TO THE PROBLEM OF MONITORING CARCINOGENIC NITROSAMINES INTO FOOD PRODUCTS - article
The brief performance of developed chromatographic method of definition most widespread and active in the carcinogenic relation volatile N-nitrosamines (NA) – N-nitrosodimethylamine and N-nitrosodiethylamine in food products represented. The contents of these carcinogens in products feed of animal and vegetative origin selected on the various meat-remake enterprises of Ukraine and some occupied items of the Kiev area, in fish and fish canned food, beer and beery malt is determined. It is shown, that the contents of these carcinogens in researched products in majority exemplars is below or at the level of the hygienic regulations, and the exceeding of the standards can be stipulated either by violation of technologies of products preparation, or by contact of them with the NA precursors, contained in smoke-dry and drying gas. The developed method is accessible in use and allows to inspect NA at levels below permissible.
