COMPARATIVE ANALYSIS OF FATTY ACID COMPOSITION OF TRADITIONAL AND EXOTIC MATERIALS article

The fatty-aсid composition of lipid components being a part of  products has been studied. The factors influencing on the accuracy of chromatographic determination of  the content of individual fatty acids have been shown. The problem of cis- and trans-isomerism of fat components and prospects for their species identification are discussed. The main correlations of the content of fatty aсids, the most characteristic of the specific kinds of the used fats, are presented, which allows their use in production of modern meat products with variable nutritive values. The regulation of fatty acids balanse provides the usual products with functional properties.
