Non volatile components are the most important for estimation of the quality of a beverage. By the method of the liquid chromatography the amino acid composition was analysed in the Georgian wines (white “Gurjaani” and red “Mukuzani”) and by the method of ion chromatography organic acids and cations of alkali metals were determined in the same types of wines.
