The importance of monitoring the contents of polycyclic aromatic hydrocarbons (namely benz(а)pyrene) in sunflower seeds on is shown. The necessity of reliable monitoring the level of benz(a)pyrene in oil, fat and fat-containing food products for the sake of cancerogenic safety is substantiated.
